Paired with 2015 Jodar's Sangiovese
Jodar's Garlic Grape seed oil
1-2 bottles of Sangiovese (one to share, and one for the cook)
1 pound of Spicy Italian Sausage
1 large yellow onion (chopped)
5 strips thick cut bacon (chopped up into bite size pieces)
4 cups Chicken Stock
2-3 cups Heavy Cream
5-6 small red potatoes (cut into bite size)
1 bunch chopped kale (stems removed, chopped in bite size)
1/2 teaspoon smoked paprika (add more for a bigger kick)
1 tablespoon freshly chopped garlic (more is always better)
Salt and pepper to taste
In large stock pot cook down bacon until crispy, remove and set aside
Add 1 teaspoon garlic grape seed oil to same pot
In same pot add sausage and cook all the way through.
Then add Onion and potatoes, salt and pepper. Cook for about 5-10 minutes
Add 1 teaspoon of garlic and cook for 3 minutes.
Then add 1 cup Sangiovese, cook for about 5 minutes
Add all of Chicken Stock and bring up to a boil, add 1 more heaping teaspoon of garlic, and smoked paprika
Then add all the cream, bring back up to a boil.
Add Kale and simmer on low for around 20 minutes.
Salt and pepper to taste.
Add Bacon a few minutes prior to serving.
